A MUST TRY!!!! SOOOOOOOOOOOO Wonderful!!!!!!!!!!
Italian Pepper Roast (giving it my own name)
Ingredients:
1 roast
1 pkg powder Italian dressing
1 jar Banana peppers with juice
salt and pepper
Directions:
Place the roast in your crockpot. Season with salt and pepper as desired or skip this step. Sprinkle package of powder Italian dressing over roast. Pour peppers and juice over roast. Cook on low 8-10 hours. Serve with these awesome smashed potatoes:
Ingredients:
Golden potatoes
fat free sour cream (I finally found this at HEB. For months I had only been able to find Light)
chicken broth
salt and pepper
Directions:
With skins ON, steam diced potatoes until tender. Add broth, sour cream, salt and pepper and mash with a hand masher. (I did however, wimp out and still used my mixer instead of hand mashing and they were still out of this world delicious!!!!)
Now you know these two things are excellent when my husband has two servings and gladly says he will eat the leftovers tomorrow night. Thank you Jen for sharing this recipe - for sure will be seen again on the menu.
