was actually a day of leftovers. I had a meeting until 6pm, Josh had a football game, Dylan had a swim meet, and Richard was to work late. With all that happening on a Tuesday night I even nixed the crockpot meal that I would normally do on a game night. We had leftovers from the weekend and Monday night so that was the plan.
I'm actually really glad I didn't do Crockpot Tuesday. Here's why. As I'm driving home today (a Wednesday) I'm thinking I really do not want to cook dinner. Oh how I wish I had leftovers at home to heat up. Perhaps I can talk Richard in to grabbing something while the boys are at church? I have to think up a plan to get out of cooking before the next 4 blocks. NOTHING :( I was totally bummed, until....
I walked in the house and smelled something wonderful! It was Taco Soup that I had put in the crockpot this morning and forgot all about! (Remember I make the boys breakfast each morning so this morning I just threw in the hamburger meat and browned all 4 lbs - for taco soup and tomorrow nights dinner, while cooking their breakfast.) This is one of my favorite things about crock pots - when you don't want to cook and show up and there it is! I had me a little taste test, then my first helping. I'll have my second helping when the boys get home :)
Taco Soup for the Crockpot
Ingredients-
1 lb hamburger
1/2 onion
powder taco seasoning
powder ranch dressing mix
1 bag frozen corn
1 can black beans or ranch style beans
1 can stewed diced tomates or Ro-tel
Brown onions, add hamburger and season to taste. Cook until done. Add the package of ranch dressing mix and taco seasoning. In the crockpot mix together meat, corn, beans, and tomatoes. Add 1 cup water. Cook on low 4-5 hours. Serve over tortilla chips, topped with cheese and sour cream.
Best when you forget its cooking and waiting for you at home - no cooking for me tonight and didn't have to go anywhere either - both very good things today!
