Hubby is out of town and I had big plans to make jam and an amazing BBQ sauce with my mom this long weekend. The kids and I packed up Saturday and headed out there and just stayed the night. After dinner my mom offered Tony a smoothie. I was stuffed, was determined Jordonna would go to bed - leading to me not being interested at all in a smoothie at that moment.
Once the smoothie was made, Tony and my mom insisted on everyone trying it. Jordonna got a small spoonful in a cup - LOVED IT. Tony gave PawPaw a cup - LOVED IT. Josh was asking for one - said he didn't like the chunks on his tongue. (Ummm, hey kid it is a SMOOTHIE! No chunks!) I gave in and tried one - LOVED IT!
Simple Mango Smoothie: (Inspired by Paula Dean)
1 fresh pineapple
1 pkg fresh strawberries
3-4 fresh mangos
1 bottle mango juice
Cut up and cube all the fresh fruit. (TIP - you will be freezing all the fruit in ziplocs, but if you throw it all in the bag you will end up with a giant frozen block of frozen fruit. Spread the fruit out on a cookie sheet and let each peice freeze individually. If you have enough ice cube trays - and patience - you can fill those with the fruit cubes and freeze too. Once it is frozen, you have individual peices to throw into the ziplocs.) Keep frozen until ready to use.
When ready, throw in a mixture of the fresh fruit and a cup of mango juice. Blend in blender until smooth. Share with all or keep it all to yourself. If it is too runny, add more fruit, too thick, add more juice - easy, peasey!
*Some recipes call for honey, we didn't have any, but this was plenty sweet from the juice and fresh fruit.
The kids had seconds and both were sitting in my lap doing "cheers" with their cups. Tony then had another serving - glad he liked it so much!
