Grocery Cart Recipe Swap

I found the Grocery Cart Challenge Recipe Swap through another blog I enjoy reading and had to take a look since I am always looking for new recipes to try out at home. Last night we tried a new one that was so good, there were no leftovers (which when I do cook a new recipe, this is usually the case). Below is the recipe:

Pecan Crusted Chicken w/ White Sauce
Of course in my family we doubled it.
4 chicken breast
salt and pepper
1/2 butter
3/4 cup finely chopped pecans
1/2 seasoned bread crumbs

3 tbsp oil

1/2 cup whipping cream
1/2 cup chicken broth

Melt the butter in a bowl. In another bowl mix bread crumbs and pecans. Salt and pepper the chicken. Brush both sides of the chicken with butter. Cover in bread crumb mix. Cook chicken until done in a hot skillet with the oil. Remove chicken and keep warm. With remaining drippings in skillet, mix together whipping cream and chicken broth until thick. Serve sauce over chicken. Our sides for this dish were sweet potatoes and asparagus.

Note: I was not able to get my sauce to thicken, but still the same it was very good!We have always made breaded chicken, but adding the pecans gave it a whole new taste.
