It's been awhile since I've had to do Crock pot Tuesdays because Joshua's football games moved to Thursday and most games were away, far away so I would stay in town with my other 3 children. Also should I mention that Luby's has Luanne plates on Thursday for $3.99 and I can feed my entire family for $20 on Thursday if we have late night events. Anyways that excuse isn't holding much water right now since football season, for us, has been long over, but I dug out the crock pot last week and tried a new recipe. That was when I realized how amazing it is to walk in at least once a week and not have to slave in the kitchen while doing homework with 3 kids and entertaining a 2 year old. Since I was sick yesterday and today, I knew I still had a chicken in the fridge that needed to be cooked so I threw it in this morning so I wouldn't have to cook for everyone tonight. (Hubby cooked last night - pizza, but that can't happen 2 nights in a row!)
So for my 5 readers...(Do I really have 5 anymore after all my slacking last year?You'd have to agree I've made up for it already this year!) I am treating you to 2, yes 2 crock pot recipes!!! And neither of them have Lipton soup mix :)
Recipe #1
Creamy Pork Chops
1 large pkg pork chops (I used boneless for the sake of a leftover recipe afterwards)
1 can cream mushroom or chicken ( I only had chicken on hand)
1/4 tsp of each of these seasonings:
rosemary, dill seed, salt, pepper, garlic
1 pkg of dry Italian dressing mix
1 block of cream cheese (i didn't use this until leftover recipe)
1/4 cup water
Sprinkle 1/4 tsp of the seasonings over the pork chops before placing them in your crock pot. Layer in the crock pot and sprinkle Italian dressing mix and cream soup over the meat. Pour in 1/4 cup water. (Water keeps the meat from sticking since there is little fat in the pork chops). Cook in low for 4- 6 hrs.
On this night we had the pork chops with the creamy gravy with yellow saffron rice and brussel sprouts (yes my boys love these, but I cheat with a recipe that uses bacon and onions).
Left Overs - Cut up a block of cream cheese. Tear pork chops apart until shredded with a fork. Put in cream cheese and cook for 1 hr on low. Serve on tortillas.
This recipe works GREAT with chicken also!!!

Crock Pot Rotisserie Chicken
SO SIMPLE and YUMMMMMMMM
1 whole chicken
non-stick spray
chicken rub or other seasonings
onion, lemon, celery (all optional)
foil
Spray the inside of your crock pot with non-stick spray. Roll up 4 pieces of foil into balls. Lay the foil balls in the bottom of crock pot. Rinse and pat dry the chicken. Be sure to take out all the gunk inside. Spray the chicken with non-stick spray and on the inside and outside rub chicken rub or other seasonings as desired. Place a lemon or onion and celery on the inside of the chicken (I left mine empty for the reason I had none of the above mentioned). Place chicken on top of the foil balls. Cook on low for 8 - 10 hrs. The 8-10 hrs is IMPORTANT. I didn't start mine in time and had to finish cooking it in the oven. But it was very good, meat falls off the bone, and tasted just like the ones you buy at the store! I had less of this one left over than when I buy them!
