OK, I think I may have eaten entirely TOO MUCH! But these sandwiches were absolutely wonderful. Jordonna and Tony kept picking at the meat while I was shredding it. I had to move away and hide just so I would have meat for dinner. I searched and searched for a French Dip sandwich recipe that I thought would be something my family would eat and came across this one. Unfortunately I can't find the original page now in my history of where it came from. The flavors in it were amazing and just not your normal roast. So I've teased you long enough, here is your Crock Pot Tuesday recipe:
French Dip Sandwiches - crock pot style
Ingredients:
1 boneless chuck roast (3-4 pounds trimmed)
1/2 cup soy sauce
1 package Au Jus
1 bay leaf
4 peppercorns
1 teaspoon fresh or dried rosemary
1 teaspoon dried thyme
1 teaspoon garlic powder
12 French sandwich rolls, split horizontally and buttered
Directions:
Place the roast in your crock pot. Combine everything but the rolls in a small bowl. Pour over the roast. Add water to the Crockpot until roast is almost covered. Cook, covered on LOW setting for 7 hours or until very tender. Remove roast, reserving broth. Discard bay leaf. Shred roast or slice very thinly. Grill your buttered rolls. Place roast in rolls and serve with broth for dipping.
We added mozzarella cheese and sautéed bell peppers and onions. (My son says that makes it a Philly Cheese steak...does it?) I sautéed my peppers and onion in butter and olive oil until soft and onions are brown. I had planned on having French fries with our sandwiches, but we were all so impatient that we didn't want to wait on the fries so we just had chips. I had already put some fried corn nuggets in the oven so we had those with it also.
My sub rolls were cut in half, but I only the two little ones actually only ate a half - the rest of us had a whole. What? You say having 2 halves was eating 2? What kinda math do you do? 2 halves equal 1 - so I only ate one! Really look it up - I'm right....I used to teach math, I kinda know these things. :)
A side note: I didn't have the peppercorns and forgot to get them at the store during my weekly run, so I'm not sure if I was missing anything by not having the peppercorns, but it obviously didn't hurt seeing the numbers of sandwiches devoured at dinner. Let me know what you think after you try this one!
