I found myself in some kinda of "FUNK" the past week or so and when I sat down to create my menu and grocery list for the week, I knew that one night of course had to be crock pot, but I wanted SUPER SIMPLE, basically I wanted SUPER SIMPLE every night!
When I found this recipe, I knew without a doubt it was simple, but it seemed so bland that when it came time to put it together I almost didn't, but considering this Tuesday was TAKS testing day I was not coming home to cook. I was pleasantly surprised with the wonderful flavor in this simple recipe. The next day for lunch leftovers was even better!
Ingredients:
4 chicken breasts (or however many you need for your family because you KNOW I needed 6 to feed this crowd over here!)
1 cup Italian dressing
1 cup chopped bell pepper
1 cup chopped onion
1 1/2 tsp minced garlic
4 peeled and diced potatoes
Season salt
2 cans green beans ( 1 can drained )
Directions:
1. Place the chicken (seasoned generously with season salt), bell pepper, onion, garlic, and potatoes in your crock pot.
2. Pour in 1 cup of Italian dressing
3. Cook on low for 7-8 hrs.
4. About 30 minutes before ready to serve, add in 2 cans of green beans, remembering to drain just one can.
Viola - your done. How easy is that. Like I said it seems like it would be so boring. While it's not fancy and all out there, it was still very good and the bell peppers and onions cooked down so much that my husband never even knew he ate them.
I was so sad because I wanted some hot buttered bread with this but we were out of butter. I wanted to sop up all that yummy juice! Next time.
