Josh has decided since the very first time I made chicken tacos that he will no longer eat beef tacos or flour tortillas, so when I found this recipe for Chicken Tacos in the crockpot, it immediately went on the menu.
Ingredients:
4-5 chicken breasts
1 cup water
1 cup salsa (we use Pace Picante)
1 pkg dry taco seasoning
juice from 3 limes
8-10 sprigs of cilantro
corn tortillas
additional cilantro
sliced limes
cheese
green sauce (Verde Sauce)
Throw it all in the crockpot, cook on low for 7 hrs. When it is time for dinner, take 2 forks and shred the chicken. Keep the chicken warm while you prepare the rest...
Heat corn tortillas* for the family, line the tortilla with chicken, sprinkle with fresh cilantro leaves, squeeze a slice of lime, add a pinch of cheese and a spoonful of Verde sauce. ENJOY!
Okay, now I'm wanting these right now - good thing my weekly menu is dry erase I can move things around, right?
*I found a quick and easy way to heat multiple corn tortillas in oil. I use my griddle, pour a tiny bit of oil on the griddle and heat 3-4 tortillas at once. 6 rounds later, I have enough for my family - can you imagine if I still had to do it one at a time.
